FAQ


What does it mean when you say GB Culinary is a boutique farm to table caterer?
Our approach is guided by experience, philosophy and flexibility. We choose to run our own farm and contribute to our local food system because it provides the highest quality ingredients, a chef's dream. But the effort is more than a matter of supporting our chef's French techniques and Southern staples. Farming is a practice that connects us to where we live and calls forth creativity when it presents limitations. We learn more about true Colorado cuisine when we follow what's coming up in our fields and on our partners' farms. We use the best of our bounty so our clients' menus are marked by the very date they chose for their event. We repurpose our failures for pig feed and compost. From scratch technique starts with seed charts, piglets and being neighborly. Boutique means we don't scale up, rather we embrace why we do what we do. It's how we bring you the curated experience you're looking for.


How do I schedule a tasting?
Many GB Culinary Event Proposals include a complimentary tasting. Once yours is revised to ring true to your plans, we invite you to schedule a tasting prior to a deposit or decision. Our farmside studio kitchen upholds a chef's table approach to workshopping your menu to your exact palate. What is your pricing structure?
We build your proposal with just four necessary line items: Menu, Staff, Service Fee and Sales Tax. Because we source organically grown produce and proteins from our own farm as well as neighboring farms committed to organic practices, we find it important to value food costs completely separate from other line items. Volume discounts may apply to guest lists over 175. We generally require a 50% deposit to secure your date, though accommodations can be made at our discretion.


How do you calculate the staff needed for my event?
Our staffing recommendations are based upon your headcount, desired service style, selected menu and venue logistics. Each of these factors can affect timely food delivery, food temperatures, etc. Our highest priority is for you and your guests to enjoy fantastic food together. We provide full service from setup to strike.  


Do you provide alcohol and bar services?
When you utilize our bar services, we are here to assist you with bar menu planning, quantities and guidance on delivery, etc. Per Colorado law, we are licensed to serve not sell alcohol. You will submit your payment for your alcohol order directly to your selected vendor(s). Our TIPS certified bartenders and servers will provide your preferred service style from full bar and/or signature cocktails, to table service and toasts. We are also more than happy to work with several boutique bartending companies in the area.


Do you offer drop off service?
We can craft an array of menus befitting drop off service. We waive the service fee for drop off menus although a delivery fee may apply depending on travel distance. 


Will you visit my venue before the event? 
We always look forward to accompanying you to a pre-event walk thru. This visit is covered in our service fee and is almost always an indispensable part of executing your event timeline as well as confirming staff numbers and addressing rental concerns. 


Do you offer assistance with rental options and orders?
Rentals are an important evaluation for any event. We work closely with you and/or your event planner to make sure you have every item necessary for service that is both stylish and smooth. It is quite possible there are items dictated by your choice of venue that might not be on your checklist. Some outdoor venues require rented kitchen equipment and some guest lists demand higher output than a venue's kitchen facilty can accommodate. We will foresee these items for you. Again, once all items are accounted for and quoted, you will submit payment directly to the selected vendor. 


Is gratuity included?
We do not include gratuity in your proposal, deposit or final invoice. We prefer to leave true thanks to you. If you would like a range of gratuity recommendations, we are happy to offer guidance based on the number of staff members serving your event.


What does a farm to table caterer serve during the winter?
Cold weather brings unique regional varieties and thoughtful culinary preparations to your menu. Farm preserves, seasonal greenhouses and responsible sourcing of any ingredients you might have your heart set on all come into play.
